Jarkop

Ingredients:
Meat – 7 or 8 ounces (200 grams)
Potato – 1 medium potato (100 grams)
Flour – 1-1/3 cups (150 grams)
Carrots – 1 small (40 grams)
Onion – 1 small (40 grams)
Red Pepper – 80 grams
Radish – 40 grams
Tomato – 1 medium sized (80 grams)
Vegetable Oil – 1/3 cup (80 grams)

Preparation

  1. Make unleavened stiff dough with flour and water, and let it sit for 20-30 minutes.
  2. Sprinkle small pieces of meat with salt, red pepper and fry until it gets a crust.
  3. Add chopped carrot, onion, tomatoes, and fry for 3-5 additional minutes.
  4. Pour boiling water and add sliced potatoes, pepper, radish, and boil for 10-15 minutes on low heat.
  5. Roll out dough to 1-1.5mm thick. Cut thin dough tablets into small squares, about 1-1/2 inches x 1-1/2 inches.
  6. Add squares of dough to boiling soup and boil for 2-3 minutes. The soup should be half watery.
  7. Take dough, meat and vegetables out and set into a colander and then into a dish.
  8. Pour the rest of the sauce into small bowls for drinking, and sprinkle with greens and black pepper.   (Greens can be substituted with chopped green garlic.)
